Cheesy Rice & Broccoli Casserole Recipe

The holidays are here and it truly is the most wonderful time of the year! One of my favorite traditions is cooking meals with my family on Christmas. Ya’ll know that I love to cook (and eat) so I’m super excited to be partnering with Riceland Foods this year to create a tasty recipe that is perfect for the holidays!

Rice has always been a favorite side dish in my family, so I wanted to transform it into a decadent dish to go with our Christmas dinner this year. This casserole is super easy to make, and you can adjust the amount of cheese and onions based on your taste. Ingredients:
  • 1.5 cups of uncooked Riceland white rice
  • 2 10oz packages of frozen chopped broccoli
  • 1/4 cup of sour cream
  • 3/4 cup of milk
  • 1/2 an onion, chopped
  • 2 cups of shredded cheddar cheese (more if you like it extra cheesy!)
  • 1 can of cream of mushroom soup
  • 1 can of cream of chicken soup
  • salt & pepper to taste
Instructions:
  1. Cook the rice according to package instructions
  2. Empty the broccoli into a microwave safe bowl and heat for 5 minutes. Drain any excess liquid
  3. Combine cooked rice, broccoli, 1 cup of cheese, and all other ingredients into a mixing bowl & stir to combine
  4. Grease a baking dish with butter or olive oil & fill with casserole mixture. Top with the remaining 1 cup of cheese
  5. Bake at 350 for 30 minutes. Enjoy!
