7 Dinner Recipes We’ve Been Loving Lately

Happy Monday, friends! If you follow along over on Instagram then you know Mondays are typically my food prep/planning days, and I thought it would be fun to bring that over onto the blog today! I love cooking, but I’ve been in a major food rut over the last few months. I get bored of cooking the same dinners week after week, so I’ve really been trying to branch out and find new recipes to try. Each week I browse and save new recipe ideas to this Pinterest board, but I wanted to share a few of our favorites here for anyone else looking for new ideas to try! These dinners are quick, easy and delicious- perfect for a weeknight meal!

Spinach Lasagna Roll Ups / recipe via foodiecrush.com

These lasagna roll ups are easy, cheesy, and a tasty way to get some greens in! The recipe calls for frozen spinach, but I like to use fresh spinach sautéed in olive oil instead. Just make sure to drain any excess oil.

Shrimp Scampi Linguine / recipe via momsdinner.net

My husband asks for this dinner almost every week and I’m not a huge pasta lover, but the buttery lemon garlic sauce is so delicious! I like to serve it with a Caesar salad and garlic bread – yum! It’s also great the next day, although we normally don’t have leftovers.

This is one of our favorite healthy dinners, and a great way to use any remaining ricotta and spinach from the lasagna roll ups! It’s full of flavor, even if you don’t have time to let the chicken marinate beforehand. I like to serve it with roasted potatoes and a green vegetable.

Making homemade chicken noodle soup seems intimidating, but it’s so easy and MUCH better than anything you’ll get in a can!! I like to use my homemade chicken broth, but any type of broth or stock would work! Leftovers are great too – the longer it sits, the more the flavors develop!

Green Chicken Enchiladas / recipe via damndelicious.net

This recipe is my personal favorite – it is SO good and easy to make. I skip the onions because my husband doesn’t like them (I’m sure it’s even better with them though) and I use green chile enchilada sauce instead of salsa verde. You really can’t go wrong no matter how you modify it. Delish!!

Easy Teriyaki Salmon / recipe via mommyshomecooking.com

A super flavorful salmon recipe and like the title says, it’s easy to make! For the sauce I use honey instead of brown sugar (I just don’t normally have brown sugar around) and it always turns out delicious! Add a little sriracha sauce if you like a kick.

Fish Tacos / recipe via natashaskitchen.com

Fish tacos are one of my favorite foods of all time and this recipe is quick, easy and delicious – don’t skip the sauce either! I save some time by searing the fish on the stove instead of baking it. Always so good!!
